How to properly scan documents and photos.

So there are alot of old documents and photos I want to keep digitally. Normal apps like camscanner are good but they only take one picture crop and filter it but the quality of the scan is bad when zoom in because of phones camera. So, first there are alot of old documents with creases so I will be using a simple clear glass on top, the glass would be simple nothing special coated on it ,and the lighting may work with my rooms lights being bright but on the walls so I can scan in the middle of the room without much glare. Second I want to take multiple pictures of my documents from different angles and up close so it can get the finer details so which app, webpage or program can I use which can process all of the images of a single page for high quality scan compared to normal scan. And it should be free. And since I would be scanning old photos too so IF possible I want the program to take over my camera so it can get that raw information and produce the most colour accurate scan of the photos.
